The Brown Moose made its debut in 1985. During that era, there were several Specialty Sandwiches that included 45 Sauce served as a condiment on the Sub (ex. DSHS, Reuben, The Cheapie, Mufalata). It was also common for Pop to substitute a seeded bun (for a sub roll) if lettuce, tomatoes, or condiments were requested as a modification. A good example was the “All Roast Beef Big Dipper, add 45 sauce and lettuce (in the sandwich).” My friends and I ate it often. One day, Pop implied (without me asking) that my new variation would not make it onto Groucho’s menu, which suddenly made it appealing for this item to be on the menu. Pop was aware that several of my friends often called me Moose, (because it rhymed with Bruce). Suddenly, there was a steady stream of my buddies coming in and asking for “What Moose Gets”. Eventually they were asking for “the Moose”. Other customers observed and wanted turkey (white) or ham (pink). Pop saw the benefit by having less to write on the ticket. “White Moose” was a lot quicker than “All Turkey Apollo, Sub Provolone, add 45, add Lettuce, Seeded Roll”. Within weeks He was toying with the idea of adding it to the Groucho’s menu. He approached me, with one caveat: “Give me a gimmick phrase and it will make it to print.” I waited a year to quickly shout out “Next time you feast, Eat a Beast!” (along with a rough sketch of Bullwinkle’s Profile). The Brown Moose Family of Specialty Sandwiches made it to the Groucho’s menu and are now “Groucho’s Famous”.
